The wines mature faster than produced from Cabernet Sauvignon and young are more harmonious because of the lower acidity and the presence of softer tannins. The aroma of young wines is described as dominated by shades reminiscent of ripe cherry and plum. Some areas are detected floral nuances. Very well grow in the presence of oak wood and the aged wines are characterized by powerful complex aroma, which detect the nuances of oak, candied fruit and smoke. Very typical of old wines of this variety are the nuances of truffles.
